Asian Lettuce Wraps
Quick, easy, healthy crowd pleaser.
My Asian Lettuce Wraps are a HUGE hit around here! SBM requests them all of the time. I make enough so that we will have leftovers. This is one of those rare dishes that even better the second time.
For this treat, you will need:
- 1 Organic Zucchini
- 1 Organic Summer Squash
- 1 lb. Ground Turkey
- ½ Cup Cilantro
- ½ Cup Green Onions
- ¼ Cup Cashews
- 1 Can Water Chestnuts (sliced)
- ¼ Cup Sriracha
- ¼ Cup Organic Soy Sauce
- 1 Tablespoon Rice Vinegar
- Large Lettuce Leaves / Head of Organic Lettuce (I use Organic Lettuce or Living Butter Lettuce)
Let’s Get Started!
- Cube Squash & Zucchini
- Slice Green Onions
- Chop Cilantro
- Drain & Slice Water Chestnuts
- Chop Cashews
- Mix: Squash, Zucchini, Green Onions, Cilantro, Water Chestnuts & Cashews together in a bowl with a lid (I use an 8 cup glass Pyrex bowl – to mix I pop the lid on and shake the bowl)
- Add: Sriracha, Soy Sauce & Rice Vinegar to bowl and set aside
- Using Medium /High heat, cook your ground turkey in a large skillet
- When your turkey is cooked, add the contents of the bowl to skillet
- Your filling is ready when Squash & Zucchini are tender
- Fill Large Lettuce Leaves with the mixture
- ENJOY!
Variations
SBM & I like to add steamed wild rice to our lettuce wraps.
To make a vegetarian option, you can leave out the ground turkey and add more squash & zucchini.
